How did I forget to post about Sunday's dinner!!?? Hubby and I were so tired from Taste of Charlotte that we decided to skip a grocery trip and just make stuff from the pantry.
Cooking from the pantry usually means Breakfast for Dinner.
I found these lovely local eggs at TJ's recently...another step towards making the switch to organic and local and being green.
The eggs went into this Fresh & Easy Multigrain Pancake Mix from the lovely Kate .
Pancakes are just so-good, aren't they?
I made an egg scramble starting with some sauteed yellow peppers (I think yellow are my fave of the pepper colors).
Then, I added the eggs and mixed in some baby spinach.
Feta finished the dish.
Look how tall the pancakes got!
They were a little on the dry side, but still tasted delicious - especially with matching Fresh & Easy Vanilla Bean Maple Syrup (also from Kate). :)
Breakfast Dinner of champions.

Sometimes I think breakfast for dinner is the way to go. Love the plating on this!

Ohmigosh, I LOVE Brinner! Breakfast food is literally my favorite kind of food. I love egg and pancakes and waffles and bacon and oh, oh now I'm hungry!

My pancakes don't get quite that tall. I have a fav recipe for whole wheat cranberry pecan pancakes from scratch. No one else in the house to eat them so I freeze for my special treats.

im going to make those pancakes for breakfast today!!! glad you got to use them and the SYRUP again...definitely the best part :)
