I've had a Mexican food craving lately...looks so good!

Looks perfect Diana! I always keep those little fajita spice mixes on hand (don't know why though, I'm sure it would be better to use spices out of my cupboard) and when I get home, I just throw the meat in a bag with the spices, a little oil and a little water. They just sit in the "marinade" while I'm cutting up the peppers and onions. So, it's not much of a "marinade", but you could try your same recipe but throw the spices on the chicken before cooking to satisfy your "marinade" guilt LOL!

thanks for the dinner idea... I usually use a red onion when I make fajitas but I am going to try the yellow one this time...
