I'm not very good at planning meals ahead of time. I tend to want to eat whatever I feel like eating at the time. However, one of my New Year's Resolutions was to start planning meals. So far, I haven't focused on that resolution, but I did plan earlier this week to make that blueberry smoothie (I mentioned on Monday) this morning - 1 for me, 1 for hubby.
I got my frozen blueberries out of the freezer and found the smoothie recipe in my book - Ellie Krieger's The Foods You Crave.
I added all the ingredients to the blender. Unfortunately, they seemed to freeze together while I was taking photos, but a little stirring with a spatula got everything going.
I got everything blended up.
I doubled the recipe to make enough to share with hubby.
The longest part about breakfast wasn't the prep, it was just drinking the smoothie. The smoothie was so thick & cold that it was hard to drink quickly...mainly due to the dreaded-brain-freeze! I consumed the my blueberry concoction so slowly that by the end, it started tasting like I was just drinking blueberry yogurt (not as good!). Next time, I'll have to remember to go a bit faster. Still, it was a big winner in our house. It was filling enough to make for a light breakfast and kept me happy through lunch. Even hubby liked it. Maybe next time I'll add some other berries?
Btw, can you believe I have more blueberries for at least one, possibly two other challenge dishes?
Ellie's Blueberry Blast Smoothie

My Note: I was a little heavy-handed on the honey and only had 2% milk on hand. I also doubled Ellie's recipe so I could make 2 smoothies. Next time, I may try using vanilla yogurt and no honey.
Ingredients:
- 1 cup 2% milk
- 1 cup non-fat plain yogurt
- 2 cups frozen blueberries
- 1 1/2 tbsp honey
Directions:
Put all ingredients into a blender and blend till smooth. Pour into 2 cups and enjoy!
The smoothie looks really yummy!!!

Oooh, that looks yummy. You wouldn't think the frozen blueberries would be enough to cause brain freeze!

I make something similar with soy yogurt and no milk. 4oz yogurt, 1/2-1cup blueberries (my stick blender can't handle more than that), fresh ground cinnamon, and a tiny bit of almond extract. If it's too thick, I love adding blueberry pomegranate or orange juice. Just a little bit makes it much more drinkable. That, or using half fresh/thawed and half frozen berries. Tasty!
